Our alpine style cheese similar to Gruyere, with a natural rind was formerly called German Alpine.

Our Hard Working Animals
Cows
Our cows are all milked on-site daily to provide the freshest milk for our cheese. Brown Swiss, Holstein and Dutch Belted cow round out the team.
Goats
We will be producing Garrotxa and Gouda with our goat milk in April.
Sheep
Our flock of milk sheep will be in milk in April. This will produce cheese available in July!OUR PRODUCTS
THE CHEESE
Ticino
Our own cheese recipe based on an Italian classic. This cheese is delicious on a cracker or by itself.
Aged: 90 days
Cheddar
A sharp and flavorful cheddar waxed for aging. Our cheddar is hand milled and salted at the exact pH to enhance flavor.
Aged: 100 days
Garrotxa
Made from goat milk with a natural rind that give it a nutty, fruitful flavor. In the next month we should be milking our goats for the summer.
Aged: 90 days
Gouda
A double washed curd version of a European favorite with a creamy texture and semi-sweet paste. We wax our gouda in the traditional red wax
Aged: 100 days
Asiago
Asiago is an Italian-style cheese made from whole cow's milk. Young asiago has a mild flavor and smooth texture, while aged at least four months has a more pungent flavor. Aged: 100 days
